Mediterannean (Shopska) Salad
Tomatoes: not used in the salad just because of their amazing color, although we do love the red. Their value is in vitamins C, B and B-6, Magnesium, Calcium and Iron which translates to beauty in a form of healthy skin and hair, increased energy and lower weight.
Cucumbers: We only choose the ripe juicy flavorful ones. They also contain multiple B vitamins, including Vitamin B1, vitamin B5, and vitamin B7 (aka Biotin needed for health metabolic, nerve, digestive and cardiovascular functions). B vitamins are known to help ease feelings of anxiety and buffer some of the damaging effects of stress. Cucumbers are rich in two of the most basic elements needed for healthy digestion: water and fiber.
Red Onion: Is one of the best natural sources of quercetin, a bioflavonoid that is particularly well suited for scavenging free radicals - hello beautiful skin. Aside from its antioxidant properties, Quercetin has been found to possess cancer fighting, anti-fungal, anti-bacterial, and anti-inflammatory properties.
Green Olives: The antioxidant nutrients in Black Oolives impede oxidation of cholesterol, thereby helping to prevent heart disease. Olives do contain fat, but it's the healthy monounsaturated kind, which has been found to shrink the risk of atherosclerosis and increase good cholesterol.
Feta Cheese: Rich in nutrients as Calcium, protein, vitamin B12, Phosphorus (helps maintain strong bones, detox and improves digestion), Riboflavin or vitamin B2 (maintains healthy blood cells, boosts energy levels, supports eye health and defends against cancer).
Roasted Bell Peppers: Are excellent source of vVitamin A (in the form of carotenoids), vitamin C and vitamin B6 (which is essential for the health of the nervous system and helps renew cells). The Capsaicin in bell peppers has multiple health benefits. Studies show that it reduces ‘bad’ cholesterol, controls diabetes, brings relief from pain and eases inflammation.
